This item ( on the stern of this CUX87 Shrimping boat ) white drum shape with a exhaust vent and stabilization turnbuckles.

Looks like a Billings Boats model.. You could ask them what it is. Good opportunity to check out their customer service.
 
It's probably the shrimp boiler used to boil the shrimps as soon as they are caught to keep them fresh. In Arendal, Norway, there used to be a shrimper that sold shrimp straight off the boat as soon as it tied up in the harbour and I remember seeing something like that on board.
 
It's a Boiler for cooking shrimps, shellfish and crabs . After cooking they would be cooled on the covered structure and packed or boxed . I built the Crab Cutter @ 35 years back and that was the explanation given in the instructions

That is the boiler for cooking the shrimp.
Shrimps need to be cooked ASAP to preserve quality and prevent the build up of extremely nasty toxins that slow-dying shrimp etc produce.
I am guessing that the square box thing is for cooling them, they didn't have them on my local boats.

The square box is a kind of vibrational sieve with different mesh sizes upper and lower for sorting different sized shrimps

I was a guess on my part, the shrimp & prawn boats don't have them.

I did say that I was guessing, the shrimp & prawn boats that I knew didn't have anything like that.

Shrimp boiler. The old East coast 'bawley's' were bawley boats...boiler boats, Shrimps were boiled as the boat headed back to port to sell the ready to eat shrimp..
