Hello Jimsky,
Thanks for your comments! However I believe you're misreading the cross sectional drawing of le Requin. The false deck sits above the primary deck and the gratings are flush with the false deck surface. On the drawing the main deck beams and decking are shown as are the stringers supporting the false deck. The grating is held in a ‘pocket’ in the false deck. This feature is also shown in the contemporary model photographs in Boudriot’s where the gratings have no frame and are flush with the raised deck planking (figures 6;8). From a purely practical point of view, if the gratings protruded from the false deck surface they could not effectively remove water which is their primary purpose. Also note that the scuppers exit betreen the primary deck and false deck.

Hello Syhobbs, It is well possible that I am misreading, I am not great at reading drafts. But... false desk is primarily used in modeling were in actual ships deck planks laid directly to the deck beams. Also, gratings are used for ventilation\source of daylights mostly and scupper to drain the water. Maybe Xebec (as a type of the vessel) used gratings to drain the water... therefore, they must be flush with the deck.
