Hello Nat, May we ask you how did you obtain the kit and who is the manufacturer? It is a possibility that plans are only in a foreign language.
You might be able to scan the plans into a computer file and the let the computer translate for you.
There are also apps for the mobile existing, which translate from all languages ..... very helpfull if you want to understand the written information in a drawing
I am also building Yacht America. It's a nice looking model, produced by Mamoli. The plans are in five languages, but the parts are only listed in Italian. The documentation leaves a lot to be desired. I am ready to start constructing the sails, which will be a first for me. There is one part, last photo below, which is a wooden carved eagle, that is not listed and not seen anywhere in the instructions where to place, but I think I will fit it on the far back side. Any suggestions appreciated.

This looks like a transom decoration. Center on the rear transom piece of your model...or if there is also a name then centered above the name with both equally centered on the transom.
