Looking really good so far. I think this kit is excellent value for money.

This is a lot of work! It’s taken a whole day just to get this far. 
Making the design on paper after tracing it from the outline of the stem. Then tracing on a piece of veneer. 
Using a file to blend the edges. I had some leftover walnut strips from my Black Pearl. They fit nicely. The reason I’m going into so much detail describing the stem work is that I haven’t seen anything showing how to do it anywhere else yet. Maybe I’m just not looking in the right places. 
Almost done!

So am I. I think I saw @dockattner doing that with his Vasa’s stem. I couldn’t remember where I had seen it. Then @Mr.Deep showed me the plans. I had to adapt it to the dimensions of this kit, but it’s pretty close. By the way, spasibo, Mr.Deep!

I would agree with Inge and go for Sapele strips
You may need to use walnut at the bottom of the rudder; same hieght as the keel.
