AHOY!. As stated in an early thread I am doing the Shipways beginner series models and am planning for the 4th ship after I complete the series.
It was recommended by one YT for beginners to get this kit: https://vanguardmodels.co.uk/products/hm-armed-cutter-sherbourne-1763
and I was wondering your opinions. I am trying not get fall into jumping into the deep end by getting a ship that requires an experienced builder.

So you recommendations would be welcome. I am in the US so I am looking mostly for US made products but open to others.

Occre has started to indicate how long a model takes to build. If you look at Occre's kits and the time, you will get an idea of what similar models require in terms of time. Long time also usually means more complicated kits, but not always. Regardless of which model you choose, also read some build logs to get an idea of what problems you will encounter. You can of course ask questions here about a specific ship that you are thinking of building.

From Model Expo, you could try the Armed Virginia Sloop or the Pride of Baltimore, or if you wanted to stretch yourself a little more, try the Fair American.
From Occre, you could try the Polaris or the Albatross for something a little harder. :)
