Sewing sails

I was able to sew the hems on the various sails for La Toulonnaise (my 2nd attempt at sewing sails). The results were OK but gave up on sewing reef bands. The stitching would bind or compress the fabric. Tried different patterns but the results were still unsatisfactory. I'm using the fabric that came with the kit. There's not much info on sewing techniques for sails that I can find in any of the books. I don't know if the problem is due to size of needle, type pattern or thread size. I would appreciate any suggestions.
 
I've attached two docs concerning model sail making. One references several YouTube tutorials, the other six articles on sail making gleaned from various web sites. There's more than you need for your immediate question, but can serve as a reference library for current and future reference. Both docs are from a recent issue of Rocky Mountain Shipwrights December 2020 newsletter, Scuttlebutt. Hope there's something of help.
