I am about to start on this ship model by Nikitin. I want to varnish the boat but when I looked through a number of builds and videos I haven’t seen anyone do this but their models look amazing and look varnished. I probably haven’t looked hard enough.
My questions are:
What varnish?
When to varnish planks, decking, etc?

If anyone can point me in the right direction that would be awesome.

I am very hopeful you have a “no stupid questions” policy.
