Noticing a mention of someone thinking of a Victory ship, I thought of military transports which played a part in my life. When I was 9 years old, I travelled with my family from New York City to Bremerhaven, Germany aboard the USS Buckner. A 10 day voyage. My dad was a Captain in the US Army. Then, years later, while I was in the army myself, assigned to a station in Korea, went aboard the USS Sultan for an 18 day trip from Oakland, California, to Inchon, Korea. To my surprise, both ships were nearly identical. I might build one (scratch build maybe...) for my collection.Screenshot_20211201-083127_Chrome.jpgScreenshot_20211201-083012_Chrome.jpg

These ships are Maritime Commission P2-SE2-R1 transports built during WWII. In plastic, the closest you will find would be the old Pyro/LifeLike/Lindberg SS President Wilson or SS President Cleveland, the American President Lines ships. The models are approximately 1/400 in scale and quite clunky but perhaps may be a starting point. I saw one on Ebay a few days ago.

I agree, this would be a nice project. I would like to see this one come to life. Personally, I would not even know where to start to build something like this from scratch.
