Hi Steve, I am also building the dory. One suggestion if you have not gotten to painting. use sanding sealer on the boat before you do the last sanding and painting. Otherwise there are large open grain and wood fuzz after you paint! Ask me how I know. Cautious

Do you prefer to brush it on or using the aerosol?
 
The poly is a good base for the paint layer. There's no adverse effect with the poly. After your last application of poly and before your application of paint I suggest you go over the surface with a 600 grit sand paper followed by fine steel wool.
 
I airbrushed the hull and interior, it is much faster and I use an airbrush for my other modeling. I used a brush for the cap rail and it also come out well.
