The best will be, that your own taste will decide - which ship do you like more?

Build Polaris first because its made for beginners. Polaris has no role model, Le renard has.
Do your first mistakes with Polaris and Le Renard will be fine.

I would chose which one do you think you will like the best. Build the other one first...to learn and I promise the 2nd will be better built and you will be happier with it.
