What is the round item that goes into the center of the shield ?

It's called a "boss". It was made from iron. The shield holder held on to the strap and had his hand inside the boss where it would be better protected. It could also make the shield more effective if it was used offensively to bash someone on the head. But, it was primarily used to protect the hand.
