Welcome to SoS! There are many of us who enjoy building 17th century Dutch Ships, including myself. I am currently building a Dutch "smalschip" from Ab Hoving's excellent book, "17th Century Dutch Ships in Paper Modeling." I have had several DMs with Mr. Hoving about his papercard modeling method (a real innovation) and about his designs for Witsen's pinas and the Jaght Heemskerck. He is very generous with his time and his knowledge and is a great resource for beginners and experts alike. So I would build the Friesland. Another Dutch tall ship (albeit with a gruesome history) is the Dutch East Indiaman (VOC) Batavia, of which there are several fine models out there, perhaps not as "sexy" as the San Felipe, but a real ship with murder, mutiny and Dutch merchants living out "The Lord of the Flies" in real life.
