If I wanted to build a Korean War version of BB 61 what changes would I need to make other than the paint scheme. Would all the weaponry be the same at that point?

Sorry to reply late to this thread, which may render all this reduntant or moot, but I've actually researched quite a bit on this as I once planned to do this very project (I ended up doing a basic, WWII Missouri).
Of the top of my head:
You would need to remove the two catapults located at the stern. During the Korean war, the Iowa would have helecopters land in the same area instead, but don't bother with a pad. Based on photos, I think these were Sikorsky S-51. The USS Iowa museum currently had a HUP‑2 Retriever displayed on its deck, which were from the same era, so it's possible they would also land on the Iowa during the war.
Significanly reduce the number of anti-aircraft guns that were spread across the ship, especially the 40mm Bofors and 20mm Oerlikons. Aircraft warfare developed to the point where these guns had become less than useful. As the ship served more of a support role during the war, I don't believe any new weaponry was added.
Add a tripod mast mounted to the aft smoke funnel. This was added to support the new radar systems that the military had developed at that point. It's other radars were also swapped out, but off the top of my head, I can't tell you specifically what those changed would look like.
I know you also mentioned the paintscheme, but just so it's said:
No Measure 22 paint scheme. Keep all verticle surfaces above the waterline, Haze Grey, wood surfaces weathered, but unpainted, and non wood, horizontal surfaced Deck Grey. Of course, Norfolk Red for below the waterline remains a constant.
The tops of both funnels are now painted black.
Turret 1 has its battleship number, "61," painted on the top surface. Turrent 2 has the American flag painted on its top surface. Remeber, at this time there's only 48 states in the US, so the number of stars should reflect.
I had a bunch of reference photos, but they're on my old laptop which, unfortunately, has a dud battery that I haven't gotten around to replacing. Here's a few reference photos I quickly pulled up though.
