Just acquired HMS Victory. My first wooden ship

I have scanned al the tables for more easy consultation and here they are, with the English manual I found online ( it's non very detailed, but better than nothing...)

Scan 05. The main mast. Is that to scale?

It says the main mast at the base is 445mm long. Yet the plan shows it a lot shorter. Also how far of the deck is the first cross beam?

I think I can answer that question about the main mast for you... 445mm isn't really all that long... about 16" in Imperial-speak. And a good portion of that length is going to fit inside the hull below the main deck. So what is left exposed above deck will likely be around 300mm or 12" (those aren't exact measurements, but it's going to be in the general ballpark). If you refer to Ismaele's build log you'll see what I'm referring to.
 
You have to consider that the scale of the original paper tables is absurd, like 1:1.35.
Of course I got the PDF by photographing the paper tables and the image is completely out of scale.
However, the correct measurements are those reported on the tables, so you can't go wrong in getting the necessary pieces.
The problem, if anything, is having the measurements that are not reported.
With the paper tables I didn't have any particular problems, for example I measured the mainmast which on the paper is not 445mm but a little less and so I got a scale ratio that I used to measure what I needed.
In your case it's a little more complicated because you don't have the paper tables. However, you can either use a software able to measure between two points of the PDF or print the PDFs in any format (better if A3) and then do as I did.

I originally thought I had some plans missing. But there all there. It was the instructions that was missing. The plans I have.

A couple weeks ago I found some instructions on the Mantua website. I downloaded them and printed them. They look slightly different to the ones you uploaded.

It appears the plans for the mast are not in scale on the heights.

I’m purchasing a few tools required to complete the build. Waiting for those to arrive. In the meantime I am studying the instructions and the plans.
 
I looked at the photos of the work done previously and noticed something that definitely needs to be corrected. The white painted frieze glued to the bow is part of the stern decorations! In my opinion you absolutely need to remove it and place it correctly.

Yes. I’ve already noticed that.

It’s glued in well. Not sure why they glued that on the front.
