take a look at this drawing as it shows what those doors might access to.
can you post better pictures of the cable reels tho i think they are directly connected to the masts' rigging.
the air vents are swivel mounted so that only air access them not water from rain & ocean spray which is not good for the ship's engine.

Also, which direction should the air vents be facing? It wouldn't make sense to have then facing forward which would allow heavy seas to enter.

These are swiveling ventilation pipes; depending on the wind, they can rotate in any direction. The largest ones are also equipped with a rotating mechanism.

I've noticed that there were 'access' doors on the bases for the masts. Not sure what the bases are called. I'll have to model them and add them. There are also cable reels on the top of the bases. Does anyone know that they were used for? Also, which direction should the air vents be facing? It wouldn't make sense to have then facing forward which would allow heavy seas to enter.

Perhaps access to the holds? That would be a good position for it. Maybe they have stairs/ladders down below?

Those are known as deck houses.
They stored everything in them.
Rope, paint, cargo gear like blocks, snatch blocks, heaving lines, cordage.
Spare parts, lumber, tarps, anything that wasn’t paying cargo would be stored here.
Cable reels would store spare wire for the winches perhaps?
No 100% sure.
The vents would face aft, to avoid boarding seas filling the cargo hold.
