I actually like the graying effect. It gives a somewhat weathered look. It would be hard to remove I think. For those who do not like the effect, it is probably advisable not to use steel wool, but to limit themselves to using sandpaper.

You can also use bronze or brass wool which is typically oil free and therefore won't mess with any finishes. Additionally, stray pieces of it that become embedded in the wood will not rust later on.

Please let me explain why the interior is somewhat neglected.
I started this build (my first) after I saw a build log of Dražen Carić and followed his example as the start of that build looked doable for a beginner (he made it look easier than it turned out to be - he is more talented than I am). I liked the build up of the hull, and at that time the decision was made that the gunport lids for the lower gun deck would be closed showing the beautiful line of the hull at its best.
If I would start over again at this time, with more experience now I might try to use the same method but also include the lower gun deck or even a POF build with all of the interior included. But starting my building career with a scratch POF build would likely have led to a disaster and sudden end of the hobby.
So I continue on the path taken, but I hope the deck furnishings and so on will later satisfy some of the needs to show what life on board was like at that time.
