Hey Grant. If this is still relevant, then first you need to tighten the shrouds, and then the stays. And you are doing the right thing on the fore mast, that you began to pull the shrouds from the stern to the bow.Thanks guys. Question:
Should I prepare the stays from the Mainmast to the foremast, the foremast backstays and the foremast preventer stays before I tension the shrouds or is this overkill? Grants logic (which when boat building is sketchy at best) says the one forestay and shrouds is enough?

As Sasha has already written, the assembly of the standing rigging begins with the shrouds. Here you must pay attention to an even tension of the shrouds on the port and starboard side (pull and counter pull) without bending the mast backwards. It's just a matter of feeling that each shroud has the same tension. Also, I would not glue any safety knots yet, so that the the shrouds can be tensioned a little more later - the backstays followat the very end, through whose slight tension the shrouds may lose some tension.
After the shrouds, the stays and preventer-stays are mounted. Here, too, care must be taken to ensure that the stays and preventer-stays are pulled evenly so that they are parallellel.

In many Victory photos, the stays can be seen sagging slightly due to its considerable weight.
The art of an attractive looking rigging is basically to realize the tension of the different ropes with tension and counter tension in a sensitive way. Too much tension can bend the masts. You couldn't play a guitar on any rope.
Your will and skill for this demanding task is there.

Something I am going to have to get 100% is the yard alignment. The “skew” main yard (still to be aligned with topping lifts) just annoys me. No pressure Grant.
